The tea
Second flush from a single estate in the Brahmaputra valley, picked in June. Second flush is the pick that gives Assam the malt — first flush is brighter and thinner, and is not what most people mean when they say Assam.
Brewing
3g per cup, water at a full boil, three to four minutes. Longer than four gets tannic. It stands up to milk, which is unusual for a whole leaf tea and is the reason to buy this one.
