The coffee
Washed Caturra and Colombia varietals, 1,700m, fermented 18 hours and dried on raised beds. Lot size is around forty sacks, so it will run out — when it does the page comes down rather than the coffee being replaced.
Brewing
60g per litre, water just off the boil, a slow pour. Four days rest minimum. If it tastes sharp it is under-extracted, so grind finer before you blame the coffee.
